Sunday/Lunch – Garden Vegetable Quiche & Dressed Mixed Greens
Monday – Rice Balls w/Avocado & Pickled Ginger, Korean Sticky Chicken, Steamed Broccoli
Tuesday – Crock Pot Spaghetti Squash Curry, Chicken Curry Pie from Trader Joes
- Spaghetti squash was not great, do not make again!
Wednesday – Grilled Chicken, Roasted Tomatoes Carrots & Asparagus, Sweet Potato
Thursday – Grilled Chicken, Cauliflower Mashed Potatoes, Asparagus
- I steam half a head of chopped cauliflower then puree it in the blender, I combine it with 2-3 boiled red potatoes in the Kitchen Aid. Salt & Pepper, butter, and milk to taste/consistency. Sometimes I just used chicken broth instead of milk.
Friday – Garlic Yogurt Chicken, Brussel Sprouts, Cauliflower Mashed Potatoes, Asparagus
Saturday – Fish, Cauliflower Mashed Potatoes, Green Beans
